SOTBAP 솥밥
Korean pot rice, known as “솥밥” in Korean, is a traditional dish where rice is cooked in a heavy stone or metal pot called a “솥” (Sot). Unlike the standard rice cooking method in a modern rice cooker, 솥밥 is prepared by soaking short-grain rice in water and then placing it in the pot with an appropriate amount of water. The pot is then covered, and the rice is cooked directly or on a stove.
Nurungji 누룽지
The key to the dish’s distinct taste and texture is the pot, which distributes heat evenly and retains it for a long time, allowing the rice to cook perfectly. As the rice cooks, a delicious crust, known as “누룽지” (Nurungji), forms at the bottom of the pot, adding a crunchy texture and a nutty flavor. This crust is highly prized and often served with water or tea or re-cooked into other dishes.
